WHOLLY GUACAMOLE® Breakfast Pizza
Braised Short Ribs
Submitted by: Chef Jenn from Dallas, TX
Ingredients
Olive oil ¼ c
Beef short ribs (not cross-cut flanken) 6 lb
Sea salt as needed
Black pepper as needed
All purpose flour 2 c
Yellow onion, large dice 2 c
Carrot, large dice 1 c
Celery, large dice 1 c
Garlic, minced ¼ c
Fresh horseradish, peeled and finely grated ¼ c
Fresh brewed coffee ½ c
Red wine 1 c
Beef stock 3 c
Canned crushed tomato 1 c (8 oz can)
Chopped flat leaf parsley ¼ c
Instructions
Pre-heat your oven to 400°. Put your Dutch oven or braising pan on the stovetop, heat to medium high heat, and add your olive oil.
Season your short ribs heavily with salt and pepper; some will fall off into the pan, so you don’t have to worry about over seasoning. Dredge each piece lightly in flour.
When the pan begins to smoke, use your tongs to lay one rib on its side into the oil. Let it brown for about 5 minutes, and then turn it slightly to begin browning the other side. Once it is dark on all sides, remove from the pan and begin again. Repeat this for all the ribs, and feel free to brown more than one at a time.
Reduce the heat in your pan to medium, and add your onion, carrot and celery. Move them around in the pan using your heat resistant spatula to make them cook more evenly. When they have begun to soften and caramelize slightly, add the garlic, horseradish, and coffee.
Allow this to cook together for 1 minute, and then add the wine bringing it up to a simmer. Once it has reduced by half, add your beef stock and crushed tomato. Turn off the burner, and bury the ribs into the sauce. Cover the pan and put it in the oven for about 2 hours, or until the meat is peeling away from the bone.
Place the ribs on a serving platter, and season the sauce to your tastes with salt and pepper. Pour just enough finished sauce over the ribs to cover and serve immediately. Garnish with lots of freshly chopped parsley.
